Spicy Moroccan Harira Soup
Ingredients:
200g lentils
200g chickpeas (cooked or canned)
200g diced lamb or beef (optional)
1 onion, finely chopped
2 celery stalks, diced
2 tomatoes, grated
2 tbsp tomato paste
1 tbsp harissa (Moroccan chili paste)
1 tsp ground cinnamon
1 tsp turmeric
1 tsp paprika
1/2 tsp cayenne pepper
1 liter vegetable or beef broth
Fresh cilantro for garnish
Preparation:
In a pot, sauté the onion and celery until soft. Add the diced meat if using, and cook until browned.
Stir in grated tomatoes, tomato paste, harissa, and spices. Cook for 5 minutes.
Add lentils, chickpeas, and broth, then simmer for 30-40 minutes until lentils are tender.
Garnish with fresh cilantro before serving.
Side Tips:
Serve with a wedge of lemon for a citrusy balance.
Add thin vermicelli noodles during the last 10 minutes for extra texture.
