Spicy Moroccan Harira Soup πΆοΈπ²
Ingredients
1 cup chickpeas (cooked or canned) π₯«
1/2 cup lentils π«
1 lb beef or lamb, diced (optional) π₯©
1 large onion, finely chopped π§
2 garlic cloves, minced π§
4 tomatoes, blended π
1/2 cup fresh cilantro, chopped πΏ
1/2 cup fresh parsley, chopped πΏ
1 tsp ground cinnamon πΏ
1 tsp paprika πΆοΈ
1/2 tsp cayenne pepper πΆοΈ
1 tsp turmeric πΏ
1/2 cup vermicelli or broken spaghetti π
6 cups chicken or vegetable stock π₯£
1 tbsp olive oil π«

Letβs Make It Happen
Prepare the Base:
Heat olive oil in a pot. SautΓ© onion and garlic until fragrant. Add diced meat (if using) and cook until browned.
Build the Soup:
Add blended tomatoes, stock, chickpeas, lentils, spices, cilantro, and parsley. Bring to a boil, then simmer for 30-40 minutes.
Finish with Pasta:
Stir in vermicelli and cook until tender. Adjust seasoning with salt and pepper.
Serve:
Ladle into bowls and serve with a squeeze of lemon juice.
