Copycat Panera Broccoli Cheese Soup
Ingredients:
- 1 tablespoon butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup flour
- 4 cups vegetable broth
- 2 cups broccoli, chopped
- 1 cup shredded carrots
- 1 cup half-and-half
- 3 cups shredded cheddar cheese
- Salt and pepper to taste
Directions:
1. Melt the butter in a large pot over medium heat. Add the chopped onion and garlic, and sauté them until they are softened.
2. Stir in the flour and let it cook for 1-2 minutes.
3. Gradually whisk in the vegetable broth until the mixture is smooth.
4. Add the chopped broccoli and shredded carrots, bring the mixture to a boil.
5. Reduce the heat and let the soup simmer until the vegetables are tender, around 10-15 minutes.
6. Stir in the half-and-half and the cheese until everything is melted and smooth.
7. Add salt and pepper to taste, then serve the soup warm.
