2 large sweet potatoes
2 medium beets, peeled and quartered
2 tbsp olive oil
Salt and pepper to taste
1 ball of burrata cheese
1/2 cup walnuts
1/4 cup fresh sage leaves
1/4 cup grated Parmesan cheese
1 clove of garlic
1/4 cup olive oil (for pesto)
Juice of 1/2 lemon

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss the sweet potatoes and beets with olive oil, salt, and pepper. Spread them on the baking sheet and roast for 25-30 minutes, or until tender.
While the vegetables are roasting, prepare the walnut sage pesto. In a food processor, combine walnuts, sage, Parmesan, garlic, and lemon juice. Pulse until finely chopped.
