French Onion Beef and Noodles

Ingredients:
1 pound beef stew meat, cut into bite-sized pieces
1 large onion, thinly sliced
2 tablespoons olive oil
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
Salt and pepper to taste
8 ounces egg noodles
1 cup shredded Swiss cheese
Fresh parsley for garnish (optional)

Directions:
In a large skillet, heat the olive oil over medium-high heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 15-20 minutes. Remove the onions from the skillet and set aside.

In the same skillet, add the beef stew meat and brown on all sides. Once browned, return the caramelized onions to the skillet. Pour in the beef broth and Worcestershire sauce, then sprinkle in the garlic powder, salt, and pepper. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for about 1.5 to 2 hours, or until the beef is tender.

While the beef is cooking, prepare the egg noodles according to the package instructions. Drain and set aside.

Once the beef is tender, stir in the cooked egg noodles until well combined. Top with shredded Swiss cheese and cover the skillet until the cheese melts.

Garnish with fresh parsley if desired, and serve warm.
