Easy Microwave Malva Pudding
Ingredients
1 cup milk (250 ml)
1 cup self-raising wheat flour
1 cup sugar
2 tablespoons margarine
1 egg
1 teaspoon bicarbonate of soda
1 teaspoon apricot jam
15 ml vinegar
1/2 cup water
1 can evaporated milk
Instructions
Cream Margarine and Sugar:
In a mixing bowl, combine the margarine and three tablespoons of sugar until the mixture is creamy.
Add Jam and Egg:
Stir in the apricot jam and the egg, whisking until well combined. Then, add the self-raising flour.
Incorporate Milk:
Dissolve the bicarbonate of soda in the milk and add it to the flour mixture.
Add Vinegar:
Mix in the vinegar and ensure all ingredients are well combined.
Microwave:
Pour the batter into a large microwave-safe dish. Microwave on high for about 10-12 minutes, or until the pudding is spongy and brown on top.
Prepare the Sauce:
In a separate bowl, dissolve four tablespoons of sugar in boiling water. Stir in the evaporated milk.
Serve:
Pour the sauce over the hot malva pudding. Serve warm with ice cream or custard.
