Crispy Baked Scallops
Ingredients:
16 large sea scallops (1 to 1½ pounds)
½ teaspoon kosher salt
¼ teaspoon coarse ground black pepper
¼ teaspoon paprika
⅛ teaspoon cayenne pepper
½ cup panko bread crumbs
4 tablespoons Parmesan cheese, grated
2 tablespoons parsley, chopped
4 tablespoons unsalted butter, melted
2 tablespoons extra virgin olive oil
Directions:
Preheat the oven to 400°F (200°C).
Pat the scallops dry thoroughly with paper towels. If present, remove the tough side muscle from each scallop.
In a bowl, mix together salt, pepper, paprika, cayenne, panko, Parmesan, parsley, olive oil, and melted butter until fully combined.
Arrange the scallops in an 8x10-inch baking dish. Spoon the breadcrumb mixture evenly over the scallops.
Bake for 15–18 minutes, or until the scallops are cooked through and the topping is golden brown.
