Cherry Pie Bars
Ingredients:
- 1 cup softened butter
- 1 3/4 cup sugar
- 1/2 tsp salt
- 3 eggs
- 1 tsp vanilla
- 1/4 tsp almond extract
- 2 1/2 cup flour
- 21 oz cherry pie filling
Glaze:
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 1 tbsp milk
Directions:
1. Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Stir in vanilla and almond extract.
4. Gradually add flour and salt, mixing until just combined.
5. Reserve about 1 cup of the dough for the topping. Press the remaining dough evenly into the prepared pan to form the crust.
6. Spread the cherry pie filling evenly over the crust.
7. Crumble the reserved dough over the cherry filling to create a streusel-like topping.
8. Bake for 40-45 minutes, or until the top is golden brown and the filling is bubbly. Remove from oven and let cool completely.
9. In a small bowl, whisk together powdered sugar, vanilla, and milk to make the glaze. Drizzle over the cooled bars.
10. Cut into squares and serve.
