Main Components:
1 salmon fillet
1 lemon slice (plus extra for squeezing)
1 cup broccoli florets
1 small zucchini, sliced into rounds
1½ tbsp olive oil (divided)
Seasonings:
Salt & black pepper
Dried herbs (parsley, thyme, or Italian blend)
Garlic powder (optional)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Roast the Veggies
Preheat oven to 425°F (220°C). Toss broccoli and zucchini in olive oil, salt, pepper, and optional garlic powder. Spread on a baking sheet and roast for 18–20 mins, flipping once, until tender and slightly charred.
2️⃣ Bake the Salmon
Place salmon on a foil-lined tray. Drizzle with olive oil, season with salt, pepper, and herbs. Top with a slice of lemon. Bake for 12–15 mins until flaky.
3️⃣ Serve
