Kielbasa and Sauerkraut Soup
Ingredients:
- 1 lb kielbasa sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can sauerkraut, drained
- 1 cup diced tomatoes
- 1 tsp caraway seeds
- Salt and pepper to taste
- Sour cream for garnish
- Chopped fresh parsley for garnish
Instructions:
1. In a large pot, cook the sliced kielbasa sausage until browned. Add the onion and garlic, and cook until fragrant.
2. Pour in the chicken broth, sauerkraut, diced tomatoes, and caraway seeds. Season with salt and pepper.
3. Bring the soup to a boil, then reduce heat and let simmer for about 20 minutes.
4. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley.
