Roasted Strawberry Whipped Ricotta Toast
Ingredients:
- 1 cup strawberries, hulled and halved
- 1 teaspoon honey
- 1/2 teaspoon balsamic vinegar
- 4 slices of rustic bread, toasted
- 1 cup ricotta cheese
- Zest of 1 lemon
- 1 tablespoon olive oil
- Fresh basil leaves for garnish
- Salt and freshly ground black pepper to taste
Directions:
1. Preheat oven to 400°F (200°C).
2. In a bowl, toss strawberries with honey and balsamic vinegar.
3. Spread the strawberries on a baking sheet and roast for 15 minutes, or until they are soft and juicy.
4. Meanwhile, in a separate bowl, whisk ricotta cheese with lemon zest and olive oil until creamy and smooth. Season with salt and pepper.
5. Spread the whipped ricotta evenly over the toasted bread slices.
