Herb Baked Chicken Drumsticks with Mashed Potatoes & Carrots

Ingredients:

For the Chicken Drumsticks:
- 6 chicken drumsticks
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp dried parsley
- ½ tsp thyme
- Salt & black pepper to taste

For the Mashed Potatoes:
- 4 medium russet potatoes, peeled & cubed
- ½ cup warm milk
- 3 tbsp butter
- ½ tsp garlic powder
- Salt & pepper to taste

For the Carrots:
- 2 cups baby carrots
- 1 tbsp butter
- 1 tsp honey (optional, for a glaze)
- Salt & pepper to taste

Directions:

1. Preheat the oven to 400°F (200°C).
2. In a large bowl, combine olive oil, minced garlic, onion powder, paprika, dried parsley, thyme, salt, and black pepper. Add the chicken drumsticks and toss until evenly coated.
3. Place the drumsticks on a baking sheet lined with parchment paper or foil. Bake for 35-40 minutes, turning halfway through, until the chicken is cooked through and the skin is crispy.
4. Meanwhile, place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
5. Drain the potatoes and return them to the pot. Add warm milk, butter, garlic powder, salt, and pepper. Mash until smooth and creamy.
6. For the carrots, melt butter in a skillet over medium heat. Add baby carrots, salt, and pepper. Cook for 8-10 minutes until tender, stirring occasionally. Drizzle honey over the carrots in the last minute if using, and toss to glaze.
7. Serve the herb baked chicken drumsticks alongside creamy mashed potatoes and glazed carrots for a comforting and flavorful meal.
