Fresh Blueberry Scones Recipe
Ingredients:
2 cups all-purpose flour
1/4 cup sugar (plus extra for sprinkling)
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
1/2 cup heavy cream (plus extra for brushing)
1 large egg
1 tsp vanilla extract
1 cup fresh blueberries (you can lightly toss them in flour to prevent sinking)
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture looks like coarse crumbs with pea-sized butter pieces.
In a separate bowl, whisk together the cream, egg, and vanilla.
Pour the wet ingredients into the dry and gently stir with a spoon or spatula until the dough just comes together. Be careful not to overmix.
Fold in the blueberries carefully.
Turn the dough out onto a lightly floured surface and shape it into a disk about 1-inch thick. Cut it into 8 wedges.
Place the wedges on the baking sheet, brush with a little heavy cream, and sprinkle with sugar.
Bake for 18-22 minutes, until golden brown.
Let the scones cool for a few minutes before serving.
