Banana Bread Cake with Cream Cheese Frosting

Ingredients:

For the banana bread cake:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon poppy seeds (optional)
1/2 cup chopped walnuts (optional)

For the cream cheese frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract

Directions:

Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 8-inch round pans.
In a large bowl, cream together butter and sugar until fluffy. Add eggs, vanilla, and sour cream. Mix well.
Stir in mashed bananas.
In a separate bowl, whisk together flour, baking soda, salt, and poppy seeds. Add dry ingredients to the wet mixture and mix until just combined. Fold in chopped walnuts if using.
Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely.

For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and beat until fluffy.
Spread the frosting evenly over the cooled cake. Garnish with banana slices if desired.
