Old Fashioned Cinnamon Apple Crisp

Ingredients:
Spiced Apples:

6 golden delicious apples, peeled and sliced (or chopped; other varieties can be used)
2 tablespoons granulated sugar
3/4 teaspoon ground cinnamon
1 1/2 teaspoons lemon juice
Crisp Topping:

1 cup light brown sugar
3/4 cup old-fashioned oats (quick oats can be substituted)
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
Pinch of kosher salt
1/2 cup cold unsalted butter, diced into small cubes
Directions:

Preheat the oven to 350°F. Grease an 8×8 baking dish with butter or non-stick spray and set aside.
In a mixing bowl, combine the chopped apples, granulated sugar, cinnamon, and lemon juice. Stir to coat the apples evenly, then transfer them to the prepared baking dish.
In a separate bowl, mix the brown sugar, oats, flour, cinnamon, and salt. Add the cold, diced butter. Using a pastry cutter, forks, or your hands, blend the butter into the mixture until it resembles pea-sized crumbs.
Evenly spread the topping over the apples in the baking dish. Gently pat the topping down to create an even layer.
Bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbling.
Serve warm with vanilla ice cream or whipped cream, if desired.
