ingredients:
- 1 cup almond flour (112 grams)
- 1/4 cup chia seeds (35 grams)
- 1/4 cup maple syrup or honey (60 ml)
- 1 egg or flax egg (1 tablespoon flaxseed meal + 3 tablespoons water)
- 1 teaspoon almond extract (5 ml)
- 1/2 teaspoon baking soda (2 grams)
- Pinch of salt
- Optional: 1/4 cup chopped almonds (35 grams)
directions:
1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the almond flour, chia seeds, baking soda, and salt. If using, add chopped almonds.
3. In a separate bowl, whisk together the maple syrup or honey, egg (or flax egg), and almond extract.
4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
5. Shape the dough into a log about 8 inches long and 2 inches wide.
6. Place the log on the prepared baking sheet.
7. Bake for 25-30 minutes, or until lightly golden and firm to the touch.
8. Remove from the oven and let the log cool on the baking sheet for about 10 minutes.
9. Carefully slice the log into 1/2-inch thick biscotti bites.
10. Arrange the biscotti bites cut-side up on the baking sheet.
11. Return to the oven and bake for another 10-15 minutes, or until golden brown and crispy.
12. Let the biscotti bites cool completely on the baking sheet before serving. Store in an airtight container at room temperature for up to a week.
