Made my go to salad π₯ for lunch today! Always fresh, always delicious, super nourishing and super easy. To make it all you need is:
- 2 cups cooked chickpea rotini pasta.
- 1 5.5 oz can white albacore tuna π in olive oil.
- 1 cup cherry tomatoes π
sliced in quarters.
- 1/2 cup pitted olives π« sliced or whole. (I used both green and kalamata this time)
- 1/2 diced avocado π₯.
- 2 large handfuls of organic baby arugula πΏ.
- 1-2 tablespoons extra virgin olive oil.
- juice of half a lemon π approx. 2-3 tablespoons.
- 1 tablespoon chopped red onion.
- sea salt and cracked black pepper to taste.
Sometimes I use shredded Parmesan cheese π§ or crumbled feta instead of the avocado but I had a half an avocado in the fridge I needed to use so this time I went that route.
Add all ingredients to a bowl and toss well. Makes 3-4 servings. Can be made in advance and kept in the fridge for 2-3 days in a sealed container. Hope youβre having a great day!
