Creamy Garlic Chicken with Mashed Potatoes

Ingredients:

For the chicken:

4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon butter

4 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley for garnish

For the mashed potatoes:

2 lbs (900g) Yukon gold potatoes, peeled and chopped

4 tablespoons butter

1/2 cup whole milk (or heavy cream for extra richness)

Salt and pepper to taste

Directions:

Boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash with butter, milk, salt, and pepper. Set aside and keep warm.

Season chicken with salt and pepper.

In a large skillet, heat olive oil and butter over medium-high heat.

Add chicken and sear for 5–6 minutes on each side until golden and cooked through. Remove from pan and set aside.

In the same skillet, add minced garlic and sauté for 1 minute.

Pour in chicken broth and scrape up any browned bits from the pan.

Stir in heavy cream, parmesan, and Italian seasoning. Let simmer for 4–5 minutes until slightly thickened.

Return chicken to the pan, spoon sauce over the top, and simmer 2 more minutes.

Serve chicken over mashed potatoes, garnished with parsley.
