Ingredients:
4 cups finely chopped peeled tart apples (like Granny Smith)
1 cup water
2 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups granulated sugar
1/2 cup brown sugar
1/2 cup heavy cream
1 package (1.75 ounces) powdered fruit pectin
Directions:
In a large saucepan, combine apples, water, lemon juice, cinnamon, and nutmeg. Bring to a boil over medium heat, then reduce heat and simmer until apples are soft, about 10 minutes.
Stir in granulated sugar and brown sugar until well blended. Return to a boil, stirring constantly.
Mix the powdered fruit pectin with a small amount of water until dissolved and add to the apple mixture. Bring to a full rolling boil that cannot be stirred down, then boil for 1 minute, stirring constantly.
Reduce heat to low and gradually stir in the heavy cream. Simmer gently for 2 minutes to thicken slightly.
Remove from heat and skim off any foam with a metal spoon.
Ladle hot jam into sterilized jars, leaving 1/4 inch headspace. Wipe jar rims and threads. Cover with two-piece lids and screw bands tightly.
Process in a boiling water canner for 10 minutes. Remove jars and cool on a wire rack.
