Ingredients π
200g digestive biscuits, crushed
100g unsalted butter, melted
600g cream cheese, softened
100g icing sugar
2 tsp vanilla extract
Zest and juice of 2 lemons
Zest and juice of 2 limes
300ml double cream
Extra lime and lemon zest for decoration

Mix the crushed biscuits and melted butter in a bowl. Press the mixture into the base of a 23cm springform tin and chill for 30 minutes. π
In another bowl, beat the cream cheese, icing sugar, and vanilla extract until smooth. π°
Add the lemon and lime zest and juice, and mix well. ππ
In a separate bowl, whip the double cream until it forms soft peaks, then fold it into the cream cheese mixture. π₯
Pour the mixture over the biscuit base and smooth the top. Chill in the fridge for at least 4 hours, or overnight. βοΈ
Decorate with extra zest before serving. Enjoy! π
