One-Pot Smoky BBQ Meatball Pasta
Ingredients:
1 lb frozen meatballs
12 oz pasta (penne or rotini)
3 cups chicken broth
1 cup smoky BBQ sauce
1 cup heavy cream
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
½ cup shredded cheddar cheese
½ cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:
Cook the Meatballs: In a large pot or Dutch oven, add the frozen meatballs and chicken broth. Bring to a simmer over medium heat, and cook for 10-12 minutes until the meatballs are cooked through and heated.
Add the Pasta: Stir in the uncooked pasta, BBQ sauce, garlic powder, and onion powder. Bring everything to a boil, then reduce the heat to medium-low. Let it simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and has absorbed some of the liquid.
Make the Creamy Sauce: Once the pasta is cooked, stir in the heavy cream, cheddar cheese, and mozzarella cheese. Cook for an additional 2-3 minutes, until the sauce becomes creamy and the cheese is melted.
Season and Serve: Taste and adjust the seasoning with salt and pepper as needed. Garnish with freshly chopped parsley before serving.
