Vidalia Onion Marinated Fried Chicken

1 Whole chicken cut up, or what ever pieces you desire
1 large or 2 medium Size Vidalia Onions
Salt to taste
Pepper to taste
1 cup self rising Flour
Cooking Oil

~~Instructions ~~
Wash and clean your chicken, let the water drain out. Take 1/2 of a large Vidalia Onion or a Medium Vidalia Onion and blend it up in a blender, if you don’t have a blender or a chopper, then take a grater and grate it up. (I grate mine up rather than clean another appliance) Make sure you save all juice that comes out too. Cut the remainder of the onion up into strips. Salt and pepper your chicken liberally, don’t be stingy with it, chicken needs it. Place your chicken in a large bowl or a large storage bag. Pour your onion mixture over your chicken and massage it into the chicken real good. Let it sit and marinate for 15 to 30 minutes. Place your cooking oil, enough to fry your chicken without submerging it into a frying pan that has a lid you can cover your chicken with. Flour your chicken piece by piece making sure to get under the skin and all surfaces. You will have some little onion pieces on your chicken, leave it. Make sure your oil is hot before putting your chicken in. Do not overcrowd your pan, I usually can fit 8 to 10 pieces at a time depending on size of the pan and of chicken. After you get your chicken in the frying pan, then take the cut up onion and sprinkle over your chicken in the pan. Cook on high about a minute til it gets to frying good, lower heat to medium high and cover with lid. Open the lid after a couple of minutes and make sure your chicken is cooking at correct temp, not to low, not to high. Cook for 8 minutes, then turn to other side, cook for another 8 minutes, then do 2 minutes on each side again. Total cooking time is 20 minutes unless chicken is really small then decrease cooking time by a couple of minutes, if chicken is really big, increase by a couple of minutes. Leave the chicken uncovered during the last 4 minutes of your cooking time. When your chicken is done, hit it with just a little salt and pepper to season while it is still hot.
