🍋 Lazy Day Lemon Cream Pie Bars

For the crust:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/2 cup melted butter
For the creamy filling:
1 (8 oz) block cream cheese, softened
1 (14 oz) can sweetened condensed milk
1/4 cup lemon juice
1 tsp lemon zest (optional)
For the lemon layer:
1 (3.4 oz) box instant lemon pudding mix
1 1/2 cups cold milk
Optional topping:
Whipped cream or Cool Whip
✅ Steps of this recipe:
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9x9-inch pan. Bake for 8–10 minutes, then let cool.
In a bowl, beat cream cheese until smooth. Add sweetened condensed milk, lemon juice, and zest. Spread over cooled crust.
In a separate bowl, whisk together lemon pudding mix and milk. Let sit for 2–3 mins to thicken, then gently spread over the cream cheese layer.
Chill in the fridge for at least 2 hours (longer is even better!).
Top with whipped cream before serving if desired. Slice into bars and enjoy!
