Garlic Herb Steak with Crispy Potatoes & Avocado Salad 🥩🥔

📝 Ingredients:
For the Steak:
2 ribeye or sirloin steaks
1 tbsp olive oil
3 cloves garlic, minced
1 tsp smoked paprika
Salt & pepper, to taste
For the Potatoes:
2 cups baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried rosemary
Salt & black pepper, to taste
For the Avocado Salad:
1 avocado, diced
1/2 cucumber, thinly sliced
1 cup shredded lettuce
1 small tomato, chopped
2 tbsp crumbled feta (optional)
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper, to taste
🍽️ Directions:
1️⃣ Roast the Potatoes:
Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Roast for 30–35 minutes until crispy and golden.
2️⃣ Prepare the Steak:
Rub steaks with olive oil, minced garlic, smoked paprika, salt, and pepper. Let marinate while potatoes roast.
3️⃣ Sear the Steak:
In a hot skillet, sear steaks for 3–4 minutes per side or to desired doneness. Let rest before slicing.
4️⃣ Make the Salad:
In a bowl, toss avocado, cucumber, lettuce, tomato, and feta with olive oil, lemon juice, salt, and pepper.
5️⃣ Assemble the Plate:
Arrange steak, crispy potatoes, and avocado salad on a plate. Serve warm and enjoy the balance of bold and fresh flavors!
