Healthy Homemade Raspberry Jam with Chia Seeds, No Sugar Added! 🌱👍

Ingredients:
2 cups / 250g fresh or frozen raspberries
3 tablespoons / 36g chia seeds
1/4 cup / 60ml water
1 tablespoon / 15ml lemon juice
Optional: Liquid stevia or monk fruit sweetener to taste (if needed, depending on berry sweetness)

Directions:
1. Combine raspberries, water, and lemon juice in a medium saucepan.
2. Bring the mixture to a gentle simmer over medium heat. Cook for 5-8 minutes, stirring occasionally, until the raspberries have broken down and released their juices. Mash gently with a fork if desired.
3. Remove the saucepan from the heat.
4. Stir in the chia seeds thoroughly, ensuring they are well distributed.
5. Let the mixture sit for at least 15-20 minutes, stirring once or twice. The jam will thicken considerably as the chia seeds absorb the liquid and gel. It will thicken further upon cooling.
6. Taste the jam. If the natural sweetness of the raspberries isn't enough for your preference, add a few drops of liquid stevia or monk fruit sweetener, stirring well after each addition, until desired sweetness is reached. Remember, the goal is sugar-free.
7. Once cooled, transfer the jam to a clean, airtight jar or container.
8. Store in the refrigerator for up to 2 weeks.
