Maraschino Cherry Cake Recipe ❤❤
Ingredients:
For the Cake:
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
¾ cup unsalted butter, softened
1 ¾ cups granulated sugar
4 egg whites
1 cup whole milk
½ cup maraschino cherry juice (from the jar)
1 tsp vanilla extract
1 cup maraschino cherries, chopped
For the Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
¼ cup maraschino cherry juice
1 tsp vanilla extract
A few drops of red or pink food coloring (optional)
Instructions:
Preheat oven: Set to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix dry ingredients: In a bowl, whisk together the flour, baking powder, and salt.
Cream butter & sugar: In a large bowl, beat the butter and sugar until light and fluffy.
Add egg whites: Beat in the egg whites one at a time until well combined.
Combine wet ingredients: Mix the milk, cherry juice, and vanilla extract in a small bowl.
Alternate mixing: Gradually add the dry ingredients and the wet mixture to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
Fold in cherries: Gently fold in the chopped maraschino cherries.
Bake: Divide the batter between the cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Make the Frosting:
Beat butter until creamy.
Gradually add powdered sugar, alternating with cherry juice.
Add vanilla extract and food coloring if desired. Beat until fluffy.
Assemble the Cake:
Place one cake layer on a plate and spread a layer of frosting.
Add the second layer and frost the top and sides.
Decorate with whole maraschino cherries on top!
