Red Velvet Buttermilk Cake
Ingredients:
For the Cake:
2 ½ cups (315g) all-purpose flour
1 ½ cups (300g) granulated sugar
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tbsp unsweetened cocoa powder
1 cup (240ml) buttermilk, room temperature
½ cup (120g) vegetable oil
2 large eggs, room temperature
2 tbsp red food coloring (liquid or gel)
1 tsp vanilla extract
1 tsp white vinegar
For the Cream Cheese Frosting:
8 oz (226g) cream cheese, softened
½ cup (115g) unsalted butter, softened
4 cups (480g) powdered sugar
1 tsp vanilla extract
Pinch of salt
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
2. Mix the Dry Ingredients:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
3. Prepare the Wet Ingredients:
In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, food coloring, vanilla extract, and vinegar.
4. Combine Wet and Dry Ingredients:
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
5. Bake the Cake:
Divide the batter evenly between the two prepared cake pans.
Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
6. Make the Cream Cheese Frosting:
In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add powdered sugar, one cup at a time, and beat until smooth and fluffy.
Add vanilla extract and a pinch of salt, then continue to beat until fully combined.
7. Assemble the Cake:
Once the cakes have cooled, place one layer of the cake on a serving plate.
Spread a generous layer of cream cheese frosting on top of the first layer.
Place the second layer on top and frost the entire cake with the remaining cream cheese frosting.
8. Serve:
Decorate with any extra cake crumbs or sprinkles if desired.
