Dandelion Cookies
1/2 cup (one stick) softened butter
2/3 cup white sugar
1 tbsp (plus a little extra 😉) good honey
1/2 tsp vanilla
1/2 tsp salt
1/2 cup rinsed and dried dandy petals. Just the yellow part, no big deal if some green bits sneak in.
1 1/2 cups flour
Combine butter, sugar, vanilla, salt, and honey until creamy, mix in dandelion petals. Add flour. Chilling is important for this recipe, so fridge for an hour. Roll them out and cut them in shortbread style, or be lazy like me and roll them in balls and smash them with a glass or just your hand. Bake at 350 for 10-15min. Since they're shortbread, I like to go a bit long for a crunchy cookie. Drizzle with honey when cooled. A sprinkle of cinnamon or a bit of lemon in the dough doesn't hurt.
