3 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

1/4 cup heavy cream

1 cup fresh raspberries

1/2 cup fresh blackberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

1/4 cup blueberry or raspberry sauce (for drizzling)

Instructions:
1. Make the crust:

Preheat your oven to 325°F (160°C).

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.

Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake for 8-10 minutes, then remove and let it cool.

2. Prepare the cheesecake filling:

In a large bowl, beat the cream cheese and sugar together until smooth.

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract, sour cream, and heavy cream until smooth and combined.

3. Assemble the cheesecake:

Pour the cheesecake batter over the cooled crust in the springform pan.

Smooth the top and bake at 325°F (160°C) for 50-60 minutes, or until the center is set and a toothpick comes out clean.
