Lemon Herb Chicken with Roasted Potatoes & Broccoli 🍋🥦

📝 Ingredients:
For the Chicken:
2 boneless skinless chicken breasts
1 tbsp olive oil
Juice of 1/2 lemon
1/2 tsp garlic powder
Salt & pepper to taste
Fresh chives for garnish
For the Potatoes:
3–4 small Yukon gold potatoes, thinly sliced
1 tbsp olive oil
Salt & pepper to taste
For the Broccoli:
2 cups broccoli florets
1 tbsp olive oil
Salt & pepper to taste
Optional Herb Sauce:
1/2 cup Greek yogurt or sour cream
1 tbsp lemon juice
1 tbsp chopped fresh parsley or chives
Salt & pepper to taste
🍽️ Directions:
1️⃣ Prep the Potatoes & Broccoli:
Preheat oven to 425°F (220°C). Toss sliced potatoes and broccoli separately with olive oil, salt, and pepper. Roast on a baking sheet for 25–30 mins, flipping halfway.
2️⃣ Cook the Chicken:
Season chicken with garlic powder, salt, pepper, and lemon juice. In a skillet, heat olive oil over medium heat. Cook chicken for 5–6 mins per side until golden and cooked through.
3️⃣ Make the Herb Sauce (Optional):
In a small bowl, mix Greek yogurt, lemon juice, chopped herbs, salt, and pepper. Stir until smooth.
4️⃣ Assemble the Plate:
Serve chicken breast with a side of roasted potatoes and broccoli. Drizzle herb sauce over the top.
5️⃣ Garnish & Serve:
Sprinkle chopped chives on top and enjoy warm!
