Ingredients:
2 racks baby back ribs or St. Louis-style ribs
Salt and pepper, to taste
1/4 cup olive oil
1/4 cup packed brown sugar
2 tbsp paprika
2 tbsp garlic powder
2 tbsp onion powder
1 tbsp ground cumin
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp black pepper
1 tbsp cayenne pepper (optional, for heat)
1 cup BBQ sauce (store-bought or homemade)
Instructions:
Prepare the Ribs:
Pat the ribs dry with paper towels. Season both sides of the ribs generously with salt and pepper.
Make the Dry Rub:
In a small bowl, combine the olive oil, brown sugar, paprika, garlic powder, onion powder, cumin, oregano, thyme, black pepper, and cayenne pepper (if using). Mix well to form a paste.
Apply the Dry Rub:
Rub the spice mixture evenly over both sides of the ribs. Cover the ribs with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor.
Preheat the Oven:
Preheat your oven to 275°F (135°C).
Cook the Ribs:
Wrap each rack of ribs in aluminum foil, sealing the edges tightly. Place the wrapped ribs on a baking sheet. Bake for 2.5 to 3 hours, or until the ribs are tender and the meat pulls away from the bones.
Preheat the Grill:
Preheat your grill to medium-high heat.
Glaze the Ribs:
Unwrap the ribs and brush them generously with BBQ sauce. Grill the ribs for 3-4 minutes per side, basting with additional BBQ sauce as needed, until the sauce caramelizes and the ribs are heated through.
