🥄 Ingredients:
2 lbs boneless skinless chicken breasts or thighs
1 (10 oz) can Rotel (diced tomatoes with green chiles)
1 (1 oz) packet taco seasoning
1 cup jarred queso dip (or more if you like it saucy)
8–10 taco shells or small tortillas
Optional toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, chopped cilantro
Directions:
Layer it in: Add chicken, Rotel, and taco seasoning to the slow cooker. Stir to coat.
Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
Shred it up: Shred chicken in the cooker with two forks.
Add queso: Stir in queso dip and cook for another 10–15 minutes on warm until melty and combined.
Serve: Spoon into taco shells and load up with your favorite toppings!
