Coconut Caribbean Beef Stew with Plantains
Ingredients
1.5 lbs beef (cut into cubes, such as chuck or brisket)
2 tablespoons vegetable oil
1 onion (chopped)
4 cloves garlic (minced)
1 tablespoon fresh ginger (grated)
2-3 tablespoons Caribbean curry powder
1 can (14 oz) coconut milk
2 cups beef broth
2-3 plantains (peeled and sliced)
Salt and pepper (to taste)
Fresh cilantro (for garnish)
Instructions
1. Sauté Aromatics
Heat Oil: In a large pot, heat vegetable oil over medium heat.
Cook Onion: Add chopped onion and sauté until translucent, about 5 minutes.
Add Garlic and Ginger: Stir in minced garlic and grated ginger, cooking for another minute.
2. Brown the Beef
Add Beef: Stir in beef cubes, browning on all sides.
Add Spices: Mix in curry powder, cooking for another 2-3 minutes until fragrant.
3. Build the Stew
Add Coconut Milk and Broth: Pour in coconut milk and beef broth. Bring to a boil.
Simmer: Reduce heat to low and cover, simmering for about 1.5 hours, or until the beef is tender.
4. Prepare the Plantains
Fry Plantains: In a separate skillet, heat oil over medium heat. Add sliced plantains and fry until golden brown on both sides. Remove and drain on paper towels.
