🛒 Ingredients:
For the dough:
1 cup all-purpose flour
1/2 cup sourdough discard (unfed)
1 tbsp sugar
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 tbsp unsalted butter (cold and cubed)
1–2 tbsp milk (as needed)
For the filling:
2 tbsp melted butter
1/4 cup brown sugar
1 tsp cinnamon
For the glaze:
1/2 cup powdered sugar
1–2 tbsp milk
1/4 tsp vanilla extract
👩🍳 Directions:
Preheat oven to 375°F (190°C). Grease or line a muffin tin or small baking dish.
Make the dough:
In a bowl, mix flour, baking soda, baking powder, sugar, and salt. Cut in the cold butter until the mix is crumbly. Stir in sourdough discard. Add milk as needed to form a soft dough.
Roll it out:
Lightly flour your surface, roll the dough into a rectangle (about 1/4-inch thick).
Add filling:
Brush with melted butter, sprinkle with cinnamon and brown sugar. Roll tightly from the long edge and cut into 1-inch bites.
Bake:
Place in your greased pan and bake 15–18 minutes or until golden.
Glaze it:
Whisk glaze ingredients and drizzle over warm bites.
