Steak with Mac and Cheese and Grilled Veggies 🍖🧀
Ingredients:
For the Steak:
2 rib-eye steaks (or your preferred cut)
2 tbsp olive oil
Salt and black pepper (to taste)
1 tsp garlic powder
1 tsp onion powder
1 tbsp butter (for finishing)
Fresh rosemary or thyme (optional, for garnish)
For the Grilled Veggies:
1 bell pepper (sliced)
1 medium onion (sliced)
1 tbsp olive oil
Salt and pepper (to taste)
For the Mac and Cheese:
8 oz elbow macaroni (or your preferred pasta)
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk (whole or 2%)
1 ½ cups shredded sharp cheddar cheese
1 ½ cups shredded mozzarella cheese
½ tsp garlic powder
Salt and pepper (to taste)
1/4 tsp paprika (optional, for extra flavor)
½ cup grated Parmesan cheese (for topping)
Instructions:
Prepare the Mac and Cheese:
Cook the elbow macaroni according to the package instructions. Drain and set aside.
In a large pot, melt 2 tablespoons of butter over medium heat.
Add 2 tablespoons of flour and whisk continuously for 1-2 minutes to make a roux (paste).
Slowly pour in the milk, whisking constantly until smooth. Cook for 4-5 minutes, or until the sauce thickens.
Reduce the heat to low and stir in the shredded cheddar and mozzarella cheese, garlic powder, paprika, salt, and pepper. Continue stirring until the cheese has melted and the sauce is smooth.
Add the cooked macaroni to the sauce and stir to combine. Set aside.
Grill the Veggies:
Heat 1 tablespoon of olive oil in a grill pan or on a grill over medium heat.
Add the sliced bell pepper and onion, seasoning with salt and pepper.
Grill the veggies for about 5-7 minutes, turning occasionally until they are tender and lightly charred. Remove from heat and set aside.
Cook the Steak:
Season the steaks on both sides with olive oil, garlic powder, onion powder, salt, and pepper.
Heat a cast-iron skillet or grill pan over medium-high heat. Once hot, add the steaks.
Cook the steaks for 4-5 minutes per side for medium-rare, or until your desired doneness is reached.
In the last minute of cooking, add 1 tablespoon of butter to the pan, spooning it over the steaks as they finish cooking.
Remove the steaks from the pan and let them rest for 5 minutes before slicing.
Assemble the Dish:
Serve the steak slices alongside the creamy mac and cheese and grilled veggies.
Optional Garnish:
Garnish with fresh rosemary or thyme on the steak, and sprinkle grated Parmesan cheese over the mac and cheese for an added flavor boost!
