📝 Ingredients:
For the Meatballs:
1 lb (450g) ground beef or lamb
1 small onion, finely chopped
2 cloves garlic, minced
¼ cup fresh parsley, chopped
1 tsp dried oregano
½ tsp ground cumin
½ tsp black pepper
½ tsp salt
1 egg
¼ cup breadcrumbs
1 tbsp olive oil (for cooking)
For the Fries:
2 large russet potatoes, cut into thick fries
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
For the Salad:
1 cup chopped romaine lettuce
½ cup radicchio, sliced
½ cup cucumber, sliced
½ tomato, sliced
¼ red onion, thinly sliced
¼ cup feta cheese, crumbled
1 tbsp olive oil
½ tbsp lemon juice
½ tsp dried oregano
Salt & black pepper to taste
🍽️ Step by Step:
1️⃣ Prepare the Fries:
Preheat oven to 425°F (220°C).
Toss potato fries with olive oil, salt, and black pepper.
Bake for 25-30 minutes, flipping halfway until golden and crispy.
2️⃣ Make the Meatballs:
In a bowl, mix ground beef, onion, garlic, parsley, oregano, cumin, black pepper, salt, egg, and breadcrumbs.
Form into small meatballs (about 1.5 inches in diameter).
Heat olive oil in a pan over medium heat.
Cook meatballs for 8-10 minutes, turning occasionally until browned and cooked through.
3️⃣ Prepare the Salad:
In a large bowl, mix lettuce, radicchio, cucumber, tomato, red onion, and feta.
Drizzle with olive oil, lemon juice, and oregano.
Toss well and season with salt and black pepper.
