Hot Honey Halloumi Tacos with Mint Yoghurt

250 g Halloumi
8 Mini tortillas
2 Avocados
60 g Arugula
50 g Pomegranate seeds
1 Heaped teaspoon harissa
2 tablespoons Honey
1 teaspoon Red pepper flakes
ΒΌ cup Greek yoghurt
10 g Mint, chopped
Directions:
1. Slice the avocados in half, remove the seed, and scoop the flesh out to mash with a fork.
2. Mix the Greek yoghurt with the chopped mint.
3. Slice the halloumi into strips, ensuring they're thick enough to hold up during cooking.
4. Combine harissa, honey, and red pepper flakes in a bowl. Add the halloumi slices and coat them with the sauce.
5. Heat a pan over medium-high heat and fry the halloumi for 3-4 minutes per side, until caramelized and golden.
6. Warm the tortillas in a dry pan or microwave for 30 seconds.
7. Assemble the tacos: spread mashed avocado on each tortilla, top with arugula, halloumi, mint yoghurt, and pomegranate seeds.
