4 oz cremini mushrooms, finely chopped
2 tbsp olive oil
2 cloves garlic, minced
ΒΌ cup fresh basil leaves πΏ
2 tbsp grated Parmesan cheese π§
2 tbsp heavy cream
1 tbsp lemon juice π
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate the Chicken
In a bowl, toss chicken slices with olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Let marinate for at least 15 minutes.
2. Prepare the Roasted Potatoes
Preheat oven to 425Β°F (220Β°C).
In a bowl, toss potato cubes with olive oil, minced garlic, rosemary, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20β25 minutes, or until golden brown and tender, flipping halfway through.
3. Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
Grill or sautΓ© the marinated chicken slices for 3-4 minutes per side, or until cooked through and lightly browned. Set aside.
4. Prepare the Creamy Mushroom-Garlic Basil Pesto
