Herb-Roasted Salmon with Veggies 🍣🥦

Bring vibrant flavors and wholesome ingredients together with this easy herb-roasted salmon dish that’s perfect for a quick weeknight dinner!

Ingredients:
- 1 cup cherry tomatoes
- 2 cups baby potatoes, halved
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 2 salmon fillets about 6 oz each
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Lemon wedges for serving

Instructions:
1. Begin by preheating your oven to 400°F (200°C) to prepare for roasting.
2. In a large mixing bowl, combine the halved baby potatoes, cherry tomatoes, and broccoli florets. Drizzle with 1 tablespoon of olive oil, and sprinkle with garlic powder, dried oregano, paprika, and some salt and pepper. Toss everything together until the vegetables are evenly coated.
3. Spread the seasoned vegetables in a single layer on a baking sheet.
4. Rub the salmon fillets with the remaining olive oil and season each side with salt, pepper, and a light dusting of paprika for an extra kick of flavor. Place the salmon fillets on the same baking sheet alongside the veggies.
5. Roast in the preheated oven for 20-25 minutes or until the salmon is cooked through and easily flakes with a fork, and the potatoes are tender when pierced with a fork.
6. Once done, sprinkle fresh chopped parsley over the top for a burst of color, and serve warm with lemon wedges for squeezing over the salmon and vegetables.
