Creamy Breakfast Spaghetti Bowl
🍝🍳 A unique morning-meets-Italian fusion dish with fluffy scrambled eggs, juicy cherry tomatoes, sweet bell peppers, and creamy mozzarella—all tossed with spaghetti in a herbaceous sauce.
Ingredients:
6 oz spaghetti
2 eggs
1/2 cup cherry tomatoes, halved
1/4 orange bell pepper, thinly sliced
1/2 cup mozzarella balls (bocconcini or ciliegine)
2 tbsp heavy cream or cream cheese
1 tbsp olive oil
1 clove garlic, minced
Salt, pepper, dried oregano or Italian herbs
Fresh parsley (optional)
Instructions:
Cook the Spaghetti:
Boil spaghetti until al dente. Drain and set aside.
Scramble the Eggs:
Beat eggs and cook in a nonstick pan over low heat until fluffy. Set aside.
Sauté the Veggies:
In the same pan, heat olive oil and gently sauté garlic, cherry tomatoes, and bell peppers for 2–3 minutes until softened.
Make the Sauce:
Add heavy cream or cream cheese and a splash of pasta water. Stir until smooth and creamy. Season with salt, pepper, and herbs.
Combine:
Toss spaghetti with the sauce. Add in scrambled eggs, mozzarella balls, and sautéed veggies. Mix gently—leave the mozzarella whole for a gooey finish.
Serve:
Plate the pasta and let some sauce drip on the rim for that rustic, homey look. Garnish with a few more herbs and a stray tomato for charm.
