A light, crunchy British classic with a golden honeycomb texture—perfect for snacking, topping ice cream, or gifting in jars!
Ingredients:
🍬 Caster sugar: 200g
🍯 Golden syrup: 100g
🥄 Bicarbonate of soda: 2 tsp
💧 Water: 2 tbsp
Method:
1️⃣ 🍯 Cook the syrup:
In a deep saucepan, melt sugar, syrup, and water over medium heat. Stir until sugar dissolves, then stop stirring and let it bubble until it turns a deep amber colour (about 5–7 mins).
2️⃣ ⚡ Add bicarb:
Remove from heat and quickly whisk in bicarbonate of soda. Watch it foam up like a science experiment!
3️⃣ 🌀 Pour & set:
Immediately pour onto a lined baking tray. Do not spread—let it expand naturally.
Cool completely (about 1 hour), then smash into shards.
