Herbed Turkey with Garlic Broccoli Pasta
Savory Herbed Turkey Tossed with Garlic Broccoli Penne
Ingredients:
2 cups cooked whole wheat penne pasta
1 lb ground turkey
2 cups broccoli florets
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Juice of 1/2 lemon
2 tablespoons chopped fresh parsley
Directions:
Bring a large pot of salted water to a boil. Add broccoli florets and blanch for 2–3 minutes until bright green and slightly tender. Remove and set aside.
In the same pot, cook penne pasta according to package directions. Drain and set aside.
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add ground turkey and cook until browned and cooked through, about 7–8 minutes.
Add garlic, thyme, basil, oregano, salt, and pepper to the skillet. Cook for 1–2 minutes until fragrant.
Stir in blanched broccoli and cooked pasta. Drizzle remaining olive oil and lemon juice over the mixture. Toss to coat evenly.
Cook for another 2–3 minutes, allowing flavors to meld.
Remove from heat, sprinkle with grated Parmesan if using, and garnish with fresh parsley. Serve hot.
