Ranch Bacon Cheeseburger Stuffed Tater Kegs
Ingredients:
8 large tater tots or mini baked potatoes (hollowed out if using real potatoes)
1/2 lb ground beef
4 strips bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1/4 cup cream cheese, softened
2 tablespoons ranch seasoning mix
1 tablespoon chopped green onion (plus more for garnish)
Salt and pepper to taste
1 tablespoon olive oil
Sour cream (optional, for serving)
Directions:
Preheat oven to 400°F (200°C). If using large frozen tater tots, bake according to package instructions, then carefully hollow them out with a small spoon.
In a skillet over medium heat, add olive oil and cook ground beef until browned. Season with salt, pepper, and ranch seasoning.
Remove from heat and stir in cream cheese, shredded cheddar, crumbled bacon, and green onions until fully combined and melty.
Carefully stuff each tater keg with the bacon cheeseburger mixture.
Place stuffed kegs on a baking sheet and bake for 10-12 minutes, or until tops are golden and slightly crispy.
Garnish with more green onions and a dollop of sour cream if desired. Serve hot!
