STRAWBERRY VANILLA BEAN ICE CREAM

INGREDIENTS

2 cups heavy cream

1 cup whole milk

¾ cup granulated sugar

1 vanilla bean (or 2 tsp pure vanilla extract)

1½ cups chopped fresh strawberries

2 tbsp sugar (for strawberries)

1 tbsp lemon juice

Pinch of salt

INSTRUCTIONS

1. Prepare the Strawberries
Toss chopped strawberries with 2 tbsp sugar and lemon juice. Let sit for 15–20 minutes. Mash lightly and chill.

2. Make the Ice Cream Base
In a bowl, whisk cream, milk, sugar, and salt.
Scrape vanilla bean seeds into the mixture (or add vanilla extract). Stir until sugar dissolves.

3. Chill the Base
Cover and refrigerate the base for at least 4 hours or overnight.

4. Churn
Pour chilled base into your ice cream maker. Churn according to manufacturer’s instructions (usually 20–25 minutes).

5. Add Strawberries
Once soft-serve texture is reached, gently fold in chilled strawberries. Swirl, don’t fully mix, for that ribboned look.

6. Freeze
Transfer to an airtight container. Freeze for at least 4 hours or until firm.
