Apple Oatmeal Cookies
Ingredients:
- 1 3/4 cups all-purpose flour (scoop and level to measure)
- 1 1/4 cups rolled old-fashioned oats
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 2/3 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 teaspoons vanilla extract
- 1 cup finely chopped peeled Granny Smith apple (1/4-inch cubes or smaller)
- 1/2 cup chopped walnuts (optional)
Cream Cheese Icing:
- 2 ounces cream cheese
- 1/2 cup powdered sugar
- 2-3 tablespoons milk
- 1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, oats, cinnamon, baking soda, and salt. Set aside.
3. In a large bowl, beat the softened butter with brown sugar and granulated sugar until creamy and smooth.
4. Add the egg and egg yolk, then mix in the vanilla extract until well combined.
5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
6. Fold in the chopped apples and walnuts (if using).
7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
9. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
10. For the cream cheese icing, beat the cream cheese until smooth, then gradually add powdered sugar, milk, and vanilla extract until the icing reaches a spreadable consistency.
11. Once the cookies are completely cool, spread or drizzle the cream cheese icing on top.
