📋 Ingredients
- 2 cups fresh cherries, pitted
- 1 cup sugar
- 1 tablespoon fresh lemon zest
- 1 tablespoon lemon juice
- 7 tablespoons water, divided
- 3 tablespoons cornstarch
- 8 ounces softened cream cheese
- 1 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 12 egg roll wrappers
- 2 cups vegetable oil, for frying
- 1 cup powdered sugar, for dusting
📝 Instructions
1️⃣ Prepare the Cherry Filling: In a small saucepan over medium heat, mix cherries, sugar, 3 tablespoons water, lemon zest, and lemon juice. Let it boil and cook for 3-4 minutes. Blend the remaining 4 tablespoons water with cornstarch until smooth, then add it to the cherry mixture. Stir until thickened, then let cool.
2️⃣ Make the Cream Cheese Filling: In a medium bowl, beat the cream cheese until fluffy, around 2-3 minutes. Add sugar, vanilla extract, and lemon juice, then beat for another 2 minutes until smooth and creamy.
3️⃣ Assemble the Egg Rolls: Lay out egg roll wrappers, add the cream cheese mixture and cherry filling, dampen edges, fold, and roll tightly.
4️⃣ Fry the Egg Rolls: Heat vegetable oil to 375F and fry egg rolls in batches until golden brown, about 2-3 minutes per side.
5️⃣ Serve: Sprinkle powdered sugar over warm egg rolls before serving.
