Fruity Pebbles Cheesecake Tacos
Ingredients:
- 2 cups Fruity Pebbles cereal
- 8 small flour tortillas
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup granulated sugar
- Fresh berries (optional, for garnish)
Directions:
1. Crush the Fruity Pebbles cereal into smaller pieces using a food processor or by placing in a sealed bag and crushing with a rolling pin.
2. Heat a dry skillet over medium heat. Warm each flour tortilla one at a time until pliable, about 10-15 seconds per side.
3. Form the warm tortillas into taco shapes by draping them over the bars of the oven rack or using a taco mold and allow them to cool and set.
4. In a large mixing bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
5. In a separate bowl, whip heavy cream with granulated sugar until stiff peaks form.
6. Gently fold the whipped cream into the cream cheese mixture until fully combined.
7. Spoon or pipe the cheesecake filling into each tortilla shell.
8. Press crushed Fruity Pebbles onto the filling, ensuring they stick well.
9. Garnish with fresh berries if desired and serve immediately or refrigerate until ready to serve.
