Cajun Beef Spaghetti in Creamy Three-Cheese Parmesan Sauce
Ingredients:
1½ lbs ground beef
12 oz spaghetti
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
Salt & pepper to taste
4 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
1 cup shredded cheddar or mozzarella cheese
½ cup reserved pasta water (if needed to thin sauce)
Fresh parsley or green onions, for garnish
Directions:
Bring a pot of salted water to a boil and cook the spaghetti according to the package directions. Reserve about half a cup of the pasta water before draining, then set the cooked pasta aside.
In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into crumbles as it cooks. Season the beef with Cajun seasoning, smoked paprika, onion powder, garlic powder, salt, and pepper.
Add the minced garlic and sauté for about a minute until it becomes fragrant. Pour in the heavy cream, then stir in the Parmesan and cheddar or mozzarella cheese. Let the mixture cook for a few minutes, stirring until the cheese melts and the sauce becomes smooth and creamy. If the sauce gets too thick, stir in a little of the reserved pasta water to loosen it up.
Add the cooked spaghetti to the skillet and toss well to coat the noodles in the cheesy Cajun sauce.
Finish with a sprinkle of chopped parsley or green onions, and serve warm.
