🍊 Fluffy Orange Cupcakes Recipe
🧁 Ingredients (makes about 12 cupcakes):
For the cupcakes:
• 1 ½ cups (190g) all-purpose flour
• 1 tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• ½ cup (115g) unsalted butter, softened
• ¾ cup (150g) granulated sugar
• 2 eggs
• Zest of 1 large orange
• ½ cup (120ml) fresh orange juice
• ¼ cup (60ml) milk
• 1 tsp vanilla extract
For the orange buttercream:
• ½ cup (115g) unsalted butter, softened
• 1 ¾ cups (220g) powdered sugar
• 1 tbsp orange zest
• 2–3 tbsp fresh orange juice
• A pinch of salt
• (Optional) orange food coloring

👩‍🍳 Instructions:
1 Preheat oven to 175°C (350°F). Line a muffin tin with cupcake liners.
2 In a bowl, whisk together flour, baking powder, baking soda, and salt.
3 In a separate large bowl, cream butter and sugar until light and fluffy.
4 Add eggs one at a time, beating well. Mix in orange zest and vanilla.
5 Combine orange juice and milk in a small cup.
6 Alternate adding dry ingredients and the juice/milk mixture into the butter mixture. Start and end with dry ingredients.
7 Divide batter into cupcake liners (fill about 2/3 full).
8 Bake for 18–22 minutes or until a toothpick comes out clean. Let cool completely.

🍊 For the frosting:
1 Beat butter until creamy.
2 Add powdered sugar gradually, mixing well.
3 Stir in zest, juice, and salt. Beat until light and fluffy.
4 Add food coloring if desired.
5 Frost cooled cupcakes and decorate with a twist of orange zest or candied peel.
