Keto Dumplings (Stuffed with Meat & Veggies)
Serves: 6–8 dumplings
Ingredients
For the dough:
2 cups shredded mozzarella
2 oz cream cheese
1 cup almond flour
1 egg
½ tsp xanthan gum (optional, for elasticity)
Pinch of salt
For the filling:
½ lb ground chicken, beef, or pork
½ cup cabbage, finely chopped
2 green onions, finely sliced
2 cloves garlic, minced
1 tsp ginger, grated
1 tbsp soy sauce or coconut aminos
1 tsp sesame oil
Salt & pepper, to taste
Directions
Make dough:
Melt mozzarella and cream cheese together in a microwave (about 1 min). Stir smooth.
Add almond flour, egg, xanthan gum, and salt. Knead into a dough. Chill 10 minutes if sticky.
Prepare filling:
In a bowl, combine ground meat, cabbage, onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well.
Shape dumplings:
Roll dough between parchment into thin circles. Place a spoonful of filling in center, fold edges, and pinch closed.
Cook:
Steam method: Place dumplings on parchment inside a steamer basket. Steam 10–12 minutes until filling is cooked.
Pan-fry method: Heat a little oil, fry dumplings until golden on one side, then add a splash of water, cover, and steam 5–7 minutes.
Serve:
Enjoy with a dipping sauce made of soy sauce, vinegar, sesame oil, and chili flakes.
Tips
Keep dough warm while shaping—if it hardens, microwave 10–15 seconds.
Fillings can be varied with mushrooms, spinach, or shrimp.
